Inspired by Terranea’s catalina kitchen’s lush garden setting, this creatively invented three-course with amuse bouche Valentine’s dinner incorporates floral and botanical elements into the menu – for an intimate and natural feel. Amuse Bouches include Laura Chenel Goat Cheese Tartlette with rainbow pickled carrots and chives; Scallops Aguachile with hibiscus, tomatillo, lime, crème fraîche and tapioca cracker; and Vitello Tonnato of veal carpaccio, tuna foam, shio koji marinated egg yolk and caper powder. Appetizer choices are Burratina with puntarelle, orange segments, black olives and bagna cauda dressing; Beef Tartare with toma fondue heart and baguette crostini; or Char-Grilled Marinated Octopus with candied leek, lemon potato foam and paprika de la vera. The Mains are a choice of Roasted Celeriac with pistachio pesto; Dover Sole with caviar beurre blanc; or Lamb Backstraps and charred beets. For the sweet ending, Dessert is Devil’s Food Cake with raspberry mouse and raspberry compote.
